Président Brie Muffins

Preparation

Preheat oven to 180⁰C.
Butter or oil muffin tray and set aside.
Chop the basil leaves.
In a saucepan, combine the milk and chopped basil and lightly heat over high heat. When the milk boils, turn off the heat. Add the butter immediately and stir well until butter is melted. Add eggs and mix well. Put mixture aside.
In a mixer, combine flour, baking powder and sugar. Make a clearing in the centre and pour the milk mixture in. Stir until it is well-combined. Add the cheese and diced tomatoes.
Pour the dough into the muffin tray and bake for 25 minutes.
Remove the muffins and leave it to cool on a rack.
Serve warm or at room temperature, together with a topping of Président My Cheese Brie spread for a full-bodied flavour.
